Harvesting: Harvest when pea pods are 2" to 3" in length, are glossy, plump, and make a "Snap!" sound when broken in half.
Ensure pods are ripe before harvesting: Should feel filled out, with individual peas.
Harvest before seeds start to plump up. Once seeds do plump further, they become fibrous and less edible.
Harvest pea pods before heat of mid-day sun, while pods are more plump.
"Snap" off the tougher ends, and remove any strings. Then you can either eat the entire pods, or the peas inside.
You can start planting early spring (March), and continue planting thru May.
Plant again in late July, early August for fall harvest.
